HERE IS THE BEST SUMMERY POCKET SALADS

For a fresh, vibrant and nutritious lunch then look no further than this exciting summery salad. Our buddies at Hillmotts have sent us this delicious and light recipe, so have a go and eat yourself happy and healthy!
INGREDIENTS
- 1 Avocado – sliced thinly
- 2 thin slices of watermelon for the pitas
- A couple of thin watermelon strips for the salad
- Handful of fine green beans chopped in half each (from frozen)
- A small bunch finely chopped mint
- Juice of 1/4 lemon
- 1/2 tbsp olive oil
- A couple of salad leaves or rocket leaves
- 1 oven warmed pita bread
METHOD
- To begin, make the salad by gathering the green beans, melon strips, half the mint, half the dressing and mixing together in a large salad bowl
- Heat the pita bread in the oven or toaster for a 2-4 minutes so it’s warm and almost crispy
- Slice the cooked pita bread open and add the melon, sliced avocado and a few salad leaves, before coating lightly with the lemon and olive oil dressing
- Put the stuffed pita on a plate and then add the remaining green bean, melon and mint salad as garnish and serve
- Enjoy!
